Productive Morning

I had a very productive morning. I managed to work the children hard today and get some laundry and cleaning done and cook. That doesn't always happen around here.

I made tortillas today. This has been the best recipe I've ever tried for tortillas and after making them I can't bring myself to purchase store bought any more. They always taste tough to me.

Here is the recipe for 16 tortillas:

1 cup lukewarm water
1/2 cup oil
2 tsp. salt
4 cups flour

I use my kitchen aide mixer but you can do this by hand. Whisk first 3 ingredients together and then add the flour. Stir until well mixed adn then knead until smooth, about 5 minutes.

Cover with a bowl and let rest for 20 minutes. Divide it into 16 equal pieces and roll each piece into a ball. Roll each ball into a round circle and cook immediately over a hot, dry skillet. Cook each one about one minute on each side until they are lightly brown.

You can put in between wax paper to cook at a later time. Keep them well covered if you do this so they won't dry out.

I used up some leftover turkey, black beans, corn and rice and added some homemade taco seasoning.
