Pizza
My children love pizza and I make it every few weeks or so. I thought I'd share my recipe with you all.
Pizza Dough
1 Tbsp. yeast
2 cups, luke warm water
3 tsp. salt
2 Tbsp. sugar
4 Tbsp. olive oil
6 1/4 cups, flour
I make my dough in my Kitchen Aid mixer. These keeps me from having to knead the dough since the dough hook and the mixer does the job for you. If you don't have a mixer, just turn the dough out onto a floured board and knead until elastic.
In the mixer, place the yeast and warm water. I whisk them together until the yeast is dissolved and foamy. Whisk in salt, sugar and olive oil.
Add the flour a bit at a time and mix on a low speed until well combined. Mix on medium for 5 minutes until the dough is elastic. Cover with a damp cloth and set in a warm place until doubled, about 45 minutes.
Your dough will look like this when done.

Grease two cookie sheets and divide the dough in two. Spread out on the cookie sheets with your hands.

Pour and spread pizza sauce on top of each pizza. Sometimes I make my own but here I used sauce in a jar.

Grate mozzarella cheese and sprinkle on top of the pizza. I leave 1/2 of one pizza cheeseless because of Emily's dairy allergies.

Place toppings on the pizza. I used mushrooms, red peppers, fresh basil and pepperoni on one pie and just the veggies on the other. You can use whatever toppings you desire.

Bake at 400 degrees for 20 minutes. Slice and eat. It's delicious!
