Hodge-podge
Today is going to be a hodge-podge type post since that's kind of how my week has gone. While I was productive at the beginning of the week the past two days I haven't done much of anything because I haven't felt great, and also have been very unmotivated. I spent one whole afternoon on the phone trying to get our dental insurance straightened out which didn't happen.
We have the New York state health insurance and their enrollment period goes until January 31st and then you are done until it reopens the following December 1st. There was a glitch in their system and according to them we don't have dental even though we've been making the premium payments and the dental insurance company has been paying. When we tried to talk to the dental insurance company they say it has to be taken care of through the state system. That can't happen because according to them we are past the enrollment time. Sigh. Government bureaucracy at its finest. That kind of took the wind out of my sails. At least it's not our medical insurance.
I cleaned up a couple of sewing projects I had on my sewing table that I never got to finish. One of them was a set of soup bowl cozies. These were requested by a local shop that carries my things and I agreed to do them but I have to say that I don't enjoy making them. They aren't super complicated but it's a bunch of tedious steps that I find completely boring. lol
What I have done this week is led a service on Monday morning, finished up the second of two projects for consecration and turned it in, did some studying and put out a newsletter. I organized my spice cabinet, cleaned the bathrooms, and helped Nathan with some math for a TABE test he needs to take in order to apply for a job. He is trying to find full-time employment with the help of his job coach. He went to take the test on Wednesday afternoon only to discover that the job coach didn't do *his* homework and find out what documentation Nathan needed to get the testing accommodations. So the test had to be rescheduled.
Do you see a pattern here this week with government agencies?
I have a pot of homemade potpourri simmering on the stove which is making the house smell wonderful. Cinnamon sticks, whole cloves, whole nutmeg, and orange slices and peel in water.
Dan and I went out to dinner one night and the sunset was a beautiful sight as we drove home.
I made a skillet dish the other night with ground beef I browned along with a chopped onion and minced garlic. I then added a can of diced tomatoes and chopped cilantro and corn. Topped it with corn bread dough and popped it in the oven. When it was about 5 minutes from being done I topped it with shredded Colby-jack cheese. It was delicious and there was none left.
I was trying to figure out what to make for dinner last night when I saw that I had a bunch of peppers so ended up with stuffed peppers.
I had one of those nights of weird dreams where I was being chased and trying to hide one moment and escape the next. I ended up oversleeping but need to get moving here in a moment. Today I need to get back on the studying/writing track and focus on preparing for a meeting with my consecration mentor on Monday, a Bible study on Tuesday, and preparing a talk for Wednesday.

I like the idea of your skillet dish topped with cornbread, wonder what might take the place of cornbread as its not something we find here.
ReplyDeleteI made my own with cornmeal; not sure if you can get that there or not? Here in the states you can purchase cornmeal in a bag or the pre-boxed mixes of cornbread. I made mine from scratch.
DeleteOr you could just use the cheese on top. Or you could also serve it over rice or with tortillas.
I really dislike those kinds of dreams, I usually have them when I get too much sleep. But then I rarely get too much sleep.
ReplyDeleteI've had wacky dreams for as long as I can remember. They are very vivid and I always remember every detail. I told my husband I kind of like going to sleep because it's like watching a movie every night! lol

Hope Nathan gets a job and that his job coach realizes how important it is to be prepared. Hate for Nathan to look bad due to someone else not doing their job correctly.
Thanks Theresa! He does have a job but is just trying to find something else that will offer full-time hours and benefits.
