A Thankful Response
My favorite week is coming up and I've been busy. Thanksgiving is on Thursday and it's one of my favorite holidays. I'm not quite sure why since it generally means days of cooking! But it's probably because I love to cook and bake and tend to show my love that way.
But it's also the time of the year when all sorts of other activities are happening too - we decorate our house for Christmas, the church gets decorated next Saturday, Advent begins on Sunday, and all the fun holiday things happen.
Today we are having a pie social after church and I made a coconut custard pie and a chocolate-walnut brownie pie. The brownie pie is a new one and it basically seems to be a brownie inside a pie crust. We will see how people like it!
I got a head start on my pie crusts and made 7 of them the other day and put them in the freezer.
I made three loaves of orange-ginger challah bread yesterday. Two went in the freezer and I'll pull one out for Thanksgiving.
We are having my father-in-law and my daughter and son-in-law for dinner on Thursday and I'm looking forward to that. So much has changed this past year with the loss of my mother-in-law and my daughter and son-in-law will be moving further away soon so I want to make sure I enjoy the time I have with family.
I also don't want to get so caught up in busyness that I don't take time to enjoy life. As much as the weather permits I've been getting out to hike. Yesterday was especially enjoyable.
I was reminded that no matter how bleak or dark the days are that the sun is always shining up above and peeps through the clouds from time to time.
That's true of our spiritual lives too. No matter our struggles here on earth, the SON is there and is the one constant we can count on to shine through the darkness.
And that truth causes me to have a thankful response. I'm thankful for reminders of God's promises and His truth. As I reflect on that, it brings me to a place of gratitude and thanksgiving.
