Wacky Chocolate Cake


I started making this cake way back when Emily was still allergic to eggs and dairy.  It is such a moist cake and everyone enjoys it.  I thought I'd share it here.

Wacky Chocolate Cake

3 cups of flour
2 cups of sugar
2/3 cup of cocoa powder
1/2 tsp. salt
2 tsp. baking soda
2/3 cup of vegetable oil
2 tsp. vanilla
2 cup of cold water
2 tsp. apple cider vinegar

Mix together dry ingredients.  Add oil, vanilla and cold water and beat on medium speed until well mixed.  Add 2 tsp. of vinegar and mix well.  Pour into a grease and floured 9 x 13" pan.  Bake at 350 degrees for 40 minutes.  Frost as desired.

Egg, Dairy and Nut Free

For this one I made a simple white frosting, though I've also done a chocolate fudge frosting with it too.

Frosting
3 cups confectioner sugar
1/4 cup melted butter
1 tsp. vanilla
3-5 Tbsp. milk

Mix first three ingredients together and then add milk, one tablespoon at a time until you get the desired consistency.

    1. That's the frosting and you don't have to make that if you want dairy free. The cake itself has no dairy. Emily outgrew her dairy allergies and I used to just make the frosting without the butter and with soy milk.
